At first it was a bit of a detox and my system felt really strange. But once I got used to it, everything was great. I won’t make any grand claims about my energy levels or anything, because I don’t think it was a long enough period of time to fairly assess that. But it was an interesting time for me. I was surprised to find just how many options I had out there. Unfortunately, most involved pasta and or cheese. Which isn’t the best for my already expanded waistline. I went on a binge shopping trip to Trader Joes and picked up anything I could find that sounded good and was also vegetarian friendly. Below are some of my takeaways. I also did a LOT more cooking with fresh ingredients and obviously vegetables. I made a killer veggie/spinach lasagna.
Overall, I decided that I will keep meat in my life. I’m upset with how the animals are treated, but at the same time, it’s just not something I’m ready to give up. I will do my best to help animals in any other way I can. I donate to animal charities, I adopted a rescue dog and I’m an active volunteer with a local rescue group. I’m not saving the world, but I’m doing a small part to help animals who can’t help themselves.
